Mini Milo Cookies
I'm not going to lie to you. Milo is my favourite beverage of all time. I know that at 34 years old, my favourite drink should be a gin and tonic. Or a nice glass of Sangiovese. But to my core, I'm a goofy kid who just loves a stone cold Milo.
So give me the opportunity to put Milo in cookies and I'm absolutely going to do it. I live for a thinner style cookie, but one that is soft, chewy and has crispy little edges. These cookies, although thin, are PACKED full of flavour - hello milo, hello milky white chocolate and of course, a sprinkling of sea salt. Right let's do it, let's get into the recipe.
Mini Milo Cookies
INGREDIENTS
225g unsalted butter, softened
150g brown sugar
150 caster sugar
2 eggs, at room temp
1 tsp vanilla essence
60g Milo + extra 40ish grams for rolling
300g plain flour
6g baking soda
Good pinch of sea salt
300g white chocolate chips
80g raw sugar
Method -
1. Start by popping your butter and sugars in the bowl of an electric mixer and beating until pale and creamy, about 4 - 5 minutes.
2. Add eggs and vanilla and beat until combined.
3. Add 60g Milo, plain flour, baking soda and sea salt and mix until combined. Add your white chocolate chips and mix through.
4. Combine raw sugar and extra 40g Milo together in a separate bowl - mix until you make a Milo sugar. Spoon heaped teaspoons of dough into the Milo sugar and roll to cover the dough ball. The dough will be sticky but should catch the Milo sugar perfectly.
5. Bake in a fan forced oven (160c) for 10 - 13 minutes and allow to cool on the pan before eating!
Trixie Tips & Tricks!
BIGGER COOKIES: Opt for larger cookies by rolling bigger balls of dough (aka a ping pong ball!) - just cook for a further 5 - 7 minutes.
ROUND COOKIES: For perfectly round cookies, bang the tray on a bench when you take the cookies out of the oven. Then shimmy a scone cutter around the cookie to make it perfectly round. This is a brilliant hack from Cloudy Kitchen - see here!
WHITE CHOC: Source the best quality white chocolate you can find. I think most of our white chocolate in the Australian supermarkets tastes like chalk, so opt for coverture buttons if your budget permits. Otherwise I love Whittakers or Aldi (yes, ALDI) white chocolate.
